Hades as a series uses age as visual shorthand to signify how long the gods have existed. Hestia is as old as civilization. As long as humans have had fires to tend, they've worshiped Hestia. The only god older than her would be Demeter, and she does look older than Hestia. While, mythologically, Hestia is a young chambermaid tending the stove, that would go against the visual language Supergiant established for themselves.
Along those lines, even in the first game they took liberties to avoid incest. The only children of Chronos in this game are Hades, Poseidon, and Zeus. Other Titans fathered the other Olympians, and they take that as writ large to increase the diversity of the cast. This is a known quantity of the game's writing. It's asinine and downright petty to start a controversy over it. I can't imagine people don't have better things to do with their time than get mad about this shit.
Hestia is the oldest goddess though. She was literally the first child of Chronos while Hades was the second and tecnically what would be his heir by birthright. If that really mattered.
